Baked Parmesan Fish Sticks with Healthy Tartar Sauce

Hello!!! I just had the best weekend soaking up the sun with great company! I spent an entire evening and day sans baby and hubby and enjoyed my time at a beautiful lakeside cabin with my girlfriend. We spent the evening on a patio overlooking the lake and woke up the next day bright and early to enjoy a hot cup of coffee on the dock in the early morning sunshine. It was absolute bliss! I feel like a new woman but Monday came too fast as always. Swimming with the fishes one minute and preparing them for dinner the next. Does that make me a sadist…. haha. Nonetheless this recipe was great! I rarely have fish although I know how great it is to include in my diet so I finally decided to give it a try. Frozen fish sticks are loaded with unnecessary additives and unknown ingredients so I opted for a homemade version. And what are fish sticks without tartar?? But sadly store bought tartar is also loaded with fat and processed ingredients, so this greek yogurt tartar sauce was a win win for flavor and nutrients!
