Salmon Cakes with Tangy Lemon Dill Sauce

I will be the first to admit that fish is definitely not one of my favorite meals. I wouldn’t go as far to say I don’t like it, but never have I found myself desiring a piece of fish. Maybe it’s my lack of recipes for preparing it, or maybe it’s the fishy smell that lingers in my kitchen days after cooking it. However, this recipe fixes both those problems. Making salmon cakes always intimidated me, but these are simple to make and will leave your kitchen smelling amazing and your taste buds even happier. I love me a good sauce so maybe the fish in this recipe is just a vehicle to get this amazing and healthy lemon dill sauce into my belly. Either way I will be making these little patties of delight many more times over the summer! Enjoy!

Asian Turkey Meatballs with Sesame Lime Dressing

When the weather gets hotter I find myself craving ice cream sandwiches and margaritas lighter dinner ideas. Unfortunately there are only so many ways you can eat salads before realizing that it’s the same dish… different leaves. And even though you may not want heavy comfort food, you also don’t want to be left hungry a few hours after dinner.
 I absolutely love Asian inspired dishes so this recipe does not disappoint. Who doesn’t love spaghetti and meatballs? But even that can get boring. These Asian turkey meatballs with lime dressing are the perfect twist on traditional beef meatballs and tomato sauce. The fresh ingredients and leaner protein are a great summer meal that leave you feeling full without feeling fat. Serve them over a bed of rice or even over greens if you are really determined to stick to yours salads. Either way you will love em!

Healthy Sloppy Joes

 As a child I remember sloppy joes as a regular dinner meal, and as an adult I still absolutely love them. They are the perfect go-to recipe with any lean ground meat you have in your fridge and take no time to make. This recipe is packed with lean protein, fresh ingredients and tastes even better as leftovers. My mom used to make the BEST sloppy joes when I was younger so now with a child of my own, I am pulling out all my simple and easy recipes again to save my sanity and time. I love this recipe and since I still can’t seem to keep my shirt clean while eating them, they stay true to their ‘sloppy’ claim.

Bonus: if you really want to make things easy on yourself…. saute the first 4 ingredients with the ground meat, toss in the slow cooker with the remaining ingredients, add 1/4 cup of water and cook on low all day! Enjoy!

Quick and Easy Unstuffed Cabbage Rolls

I occasionally have days when I’m feeling quite domesticated and the idea of hand making perogies or cabbage rolls crosses my mind. Then I remember that fact that I don’t have six hours of extra time just kicking around and I’m not a Polish Iron Chef, so I browse for the next recipe. But once I realized that if I simply deconstructed (aka…. lazy man cooking) the cabbage rolls, I could make them in a fraction of the time, without skimping on any of the flavor. Spicy Coconut Vegetarian Rotini

 

IMG_0012Hello July! How nice of you to greet us with 39 degree weather and smoky forest fire air, but none the less here you are! We have been having extremely higher than normal weather for the past two months so it’s hard to believe that summer is just starting! So the other day when it was a cool 28 degrees out I decided to try to this recipe. I was craving something full of flavor and full of nutrients. Enter in my love for pasta! It is simply something that I have never attempted to eliminate from my life, instead I have just opted for healthier ingredients and gluten free noodles. Although this recipe is meant to be vegetarian, I added some cooked chicken last minute which is completely optional. And don’t be scared of the spice, it is very mild, unlike the July temperatures outside my kitchen door. Happy cooking!
