Healthy Sloppy Joes

 As a child I remember sloppy joes as a regular dinner meal, and as an adult I still absolutely love them. They are the perfect go-to recipe with any lean ground meat you have in your fridge and take no time to make. This recipe is packed with lean protein, fresh ingredients and tastes even better as leftovers. My mom used to make the BEST sloppy joes when I was younger so now with a child of my own, I am pulling out all my simple and easy recipes again to save my sanity and time. I love this recipe and since I still can’t seem to keep my shirt clean while eating them, they stay true to their ‘sloppy’ claim.

Bonus: if you really want to make things easy on yourself…. saute the first 4 ingredients with the ground meat, toss in the slow cooker with the remaining ingredients, add 1/4 cup of water and cook on low all day! Enjoy!

Quick and Easy Unstuffed Cabbage Rolls

I occasionally have days when I’m feeling quite domesticated and the idea of hand making perogies or cabbage rolls crosses my mind. Then I remember that fact that I don’t have six hours of extra time just kicking around and I’m not a Polish Iron Chef, so I browse for the next recipe. But once I realized that if I simply deconstructed (aka…. lazy man cooking) the cabbage rolls, I could make them in a fraction of the time, without skimping on any of the flavor. Sirloin Strip Sandwich

If you’re looking for a mouthwatering sandwich worthy of it’s place on a pub menu, look no further. This is my favorite steak sandwich recipe and considering that I am not much of a big meat eater, that says a lot in itself. This recipe is quick and easy but the end result is nothing short of delicious. Although the ingredients don’t sell themselves to be that exciting, whose to say that complicated equals great. Peanut butter and jam sandwiches never needed any fancy ingredients to be amazing? Baked Parmesan Fish Sticks with Healthy Tartar Sauce

Hello!!! I just had the best weekend soaking up the sun with great company! I spent an entire evening and day sans baby and hubby and enjoyed my time at a beautiful lakeside cabin with my girlfriend. We spent the evening on a patio overlooking the lake and woke up the next day bright and early to enjoy a hot cup of coffee on the dock in the early morning sunshine. It was absolute bliss! I feel like a new woman but Monday came too fast as always. Swimming with the fishes one minute and preparing them for dinner the next. Does that make me a sadist…. haha. Nonetheless this recipe was great! I rarely have fish although I know how great it is to include in my diet so I finally decided to give it a try. Frozen fish sticks are loaded with unnecessary additives and unknown ingredients so I opted for a homemade version. And what are fish sticks without tartar?? But sadly store bought tartar is also loaded with fat and processed ingredients, so this greek yogurt tartar sauce was a win win for flavor and nutrients!
