Apple Lentil Sloppy Joes

Fall is right around the corner…. seven days to be exact. So my summer recipe ideas are slowly converting to heavier meals that resonate with comfort food and not bikinis. I try to eat at least three vegetarian meals a week but over the past few months I have tried more and more vegan recipes. I like to challenge my taste buds a little and also switch up traditional recipes. It expands my knowledge of flavor profiles and also stocks up my pantry with different ingredients that I wouldn’t otherwise use.

Laksa Soup

It may be July but our weather has been far from the typical sunshine and heat that covers the valley this time of year. With cool and rainy mornings and afternoons of thunder and overcast it feels a lot more like fall is rolling in. I’ve traded in my sundresses for jeans and hoodies and swapped my summer meals  for comfort food. I know as of tomorrow the weather will soar right back up so I took advantage of the cooler days and tried some new recipes. I absolutely love Laksa soup and for those of you that haven’t tried it, it’s an amazing mix of coconut, curry and spice in one delicious noodle bowl. Usually it’s pretty difficult to recreate ethnic restaurant meals at home but this recipe was right on par and by no means difficult to make. It will satisfy your sweet, savoury, and spicy tastebuds all in one bowl!

Salmon Cakes with Tangy Lemon Dill Sauce

I will be the first to admit that fish is definitely not one of my favorite meals. I wouldn’t go as far to say I don’t like it, but never have I found myself desiring a piece of fish. Maybe it’s my lack of recipes for preparing it, or maybe it’s the fishy smell that lingers in my kitchen days after cooking it. However, this recipe fixes both those problems. Making salmon cakes always intimidated me, but these are simple to make and will leave your kitchen smelling amazing and your taste buds even happier. I love me a good sauce so maybe the fish in this recipe is just a vehicle to get this amazing and healthy lemon dill sauce into my belly. Either way I will be making these little patties of delight many more times over the summer! Enjoy!

Asian Turkey Meatballs with Sesame Lime Dressing

When the weather gets hotter I find myself craving ice cream sandwiches and margaritas lighter dinner ideas. Unfortunately there are only so many ways you can eat salads before realizing that it’s the same dish… different leaves. And even though you may not want heavy comfort food, you also don’t want to be left hungry a few hours after dinner.
 I absolutely love Asian inspired dishes so this recipe does not disappoint. Who doesn’t love spaghetti and meatballs? But even that can get boring. These Asian turkey meatballs with lime dressing are the perfect twist on traditional beef meatballs and tomato sauce. The fresh ingredients and leaner protein are a great summer meal that leave you feeling full without feeling fat. Serve them over a bed of rice or even over greens if you are really determined to stick to yours salads. Either way you will love em!

Genoa Salami Salad with Spicy Hummus Dressing

Okay seriously this is my favourite salad to make, definitely in my top five recipes. I find that I only like salads if they eat more like a meal and less like rabbit food so I like to pack my salads with all sorts of goodies. The dressing for this salad is amazing! In all honesty I could eat it by the spoonful…. which sometimes I do because come on…. it’s just mostly yogurt and chick peas. Most dressings are what turn a salad from fresh to fattening so when I tried this dressing I was stoked. Not only is it guilt-free so I can literally drown my salad in it, but it’s creamy and full of flavor. It is my go-to salad in the summer when I’m craving something tangy and spicy! I also love the addition of a good quality cured meat when I get sick of chicken as the main meat source in my summer dishes. I like this salad even spicier so I usually grab a spicy genoa salami at my local Italian market too. Enjoy!

Healthy Easter Snacks

With Easter right around the corner, it’s hard not to sneak in that extra mini egg or chocolate bunny every time you pass that cute little Easter basket sitting on the counter. But just because its a holiday doesn’t mean that all your food options have to be covered in chocolate. There are so many other ways to make Easter fun without emptying your wallet in the seasonal candy aisle.
