Easy Orange Chicken

Hey everyone!! Lets just start by saying that spring is in the air and I am loving every minute. So far this year has been filled with tons of fun. It was my hubby’s birthday in January, I went on a child-free girls weekend to Calgary in February to take in an NHL game, shopping and great company and in only a few short months of 2015 we have enjoyed some great date nights, weekends away and also memorable time as a family. I am getting so excited for this summer to enjoy camping, swimming, beach days and the Okanagan at it’s best! But until then I am sneaking in as much sunshine and fresh air as I can. However, once the sun goes down (which is getting later and later…. yippee) it is still pretty darn chilly so I am indulging in my comfort food recipes for a few more weeks. This recipe is a great combination of sweet and savory and without the traditional deep frying of the chicken, this recipe is only a fraction of the fat and calories. It is super quick and easy to make so it’s ideal  for those nights when the Chinese take out menu seems to be calling your name. Enjoy!

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut in bite-sized pieces
  • salt and pepper
  • 2 Tbsp. coconut oil
  • orange chicken sauce (recipe below)
  • thinly-sliced green onions
  • toasted sesame seeds

Sauce Ingredients

  • 3 cloves garlic, minced
  • 1/2 cup orange juice
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup rice wine vinegar
  • 3 Tbsp. cornstarch
  • 1/2 tsp. ground ginger
  • 1/2 tsp. white pepper
  • pinch of crushed red pepper flakes
  • zest of orange (optional)

Directions:

1. Season chicken with salt and pepper. Heat oil in a large saute pan over medium-high heat. Add chicken and saute for about 4-6 minutes until the chicken is browned and almost cooked through.

2. Whisk together all the sauce ingredients. Pour orange sauce over chicken and stir. Let the sauce come to a boil, then boil for a couple minutes until thickened.

3. Remove from heat and serve immediately over quinoa or rice. Garnish with green onions, sesame seeds and orange zest.
