It’s been a busy weekend so far! It’s my brother’s 30th birthday today so last night we had a bunch of friends over to our house for a big BBQ. That’s what I love most about summer….. great friends…. good food and a warm summer night. So after a lazy morning today, my hubby and I are heading over to my mom’s for a family birthday lunch and then hopefully a relaxing evening. I hope you are all having a great weekend as well!
Anywho…. I found my passion for cooking and baking a few years ago and ever since then I have been constantly expanding my personal recipe collection. However I have to admit that a couple months ago was the first time I had ever cooked a hard boiled egg! I never seemed to need them in recipes and I sorta forgot how much I loved them in sandwiches. Plus I always assumed they were hard to make (no pun intended…haha). Some of them barely peel, some of them turn a very unappealing shade of grey inside…. and what if you over cook them!? Well turns out they were a lot easier than I thought. With a few tips I have been making perfect yellow-centered hard boiled eggs ever since. 1 Add eggs to a saucepan in a single layer. Cover in at least 1-2 inches of cold water. (Using cold water and gently bringing the eggs to a boil keeps them from cracking.) Add half a teaspoon of salt (helps prevent cracking while cooking). Bring the eggs to a boil.
2 Reduce the heat to low right away. Let simmer for one minute and then remove the pan from the heat and let sit for 12 minutes.
3 Strain out the water from the pan, fill the pan with cold water and as soon as the water gets warm strain again and fill with cold water again. Once cooled, strain the water from the eggs. Store the eggs in a covered container.
