Hey everyone! I hope you are having a great weekend! Mine has been flying by! My hubby and father-in-law have been working like dogs rebuilding our garage and since a 7 month prego lady isn’t too much help with construction….. I’ve been indulging in the Okanagan life. I spent Saturday with my sister walking along the lake with Chai Frappuccino’s in hand and the sunshine on our backs. Then last night I dragged my hubby away from the nail gun and we went to a surprise birthday dinner on a private rooftop patio where we enjoyed a homemade donair dinner and ice cream cake for dessert! Oh how I love my life!

And now after lounging in my pajama’s all morning I’m heading to the beach with my girlfriend Lise for an afternoon of floating on the lake. It’s a pretty tough life I live!

So since I’m going to be floating among the fishies this afternoon I thought….. why not share my favourite fish recipe!? These blackened salmon tacos have a little bit more preparation than a bbq burger but well worth the chopping! It’s so refreshing and a great healthy alternative to fish and chips. I was out of tomatoes at the time so I added chopped cabbage instead. Be as creative as you like. The more fresh veggies the better!! Enjoy!

Ingredients

Blackened Salmon:
1 pound salmon
2 Tbsp coconut oil
2 Tbsp flour
2 tsp chili powder
1 tsp smoked paprika
2 tsp brown sugar
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp cayenne pepper
1/2 tsp each salt and pepper

Avocado Salsa:
1 ripe avocado, finely chopped
1 tomato, diced
1/4 cup red onion, diced
2 tablespoons cilantro, chopped
zest and juice of half a lime
salt and pepper to taste

Cilantro Ranch Dressing:
1/4 cup Greek yogurt
2 Tbsp mayonnaise
2 Tbsp milk
juice of half a lime
1 clove garlic, minced
2 Tbsp green onions, thinly sliced
1/4 cup cilantro leaves
1/4 tsp salt
1/4 tsp pepper
