This is hands down my favourite banana recipe to make! I got the recipe from my mom and I think it was originally called Banana Crater Cake. Now I don’t know about you… but I’m not necessarily tempted to make or eat a dessert that associates itself with what my thighs might look like after eating a piece. So I’ve taken the liberty to rename it Banana Layer Cake. (because of the yummy layers of brown sugar, cinnamon and chocolate chips of course) Haha okay it’s not that bad…. but I still wouldn’t consider it a breakfast replacement.
Now I love to cook healthy but on the blue moon when I bake for myself instead of clients…. well I treat myself with the real thing. This cake is fool-proof, a great use for nasty bananas and an even better dessert for company coming over! I have taken it to work several times, put it in the staff room and before first coffee break has begun it’s already gone. It’s THAT good… or my coworkers don’t eat breakfast. Either way I absolutely love it… even more so now that I’m pregnant! Oh the joys of dessert! Hope you like it!
- 1 cup butter
- 2 cup sugar
- 2 eggs beaten
- 1 tsp vanilla
- 3 ripe bananas
- 3 cup flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 cup light sour cream (or greek yogurt)
- 1 tsp cinnamon
- 1/2 cp brown sugar
- 1 1/2 chocolate chips
1. Preheat oven to 350 degrees. Cream together butter and sugar. Add the eggs and beat until smooth. Add vanilla and mashed bananas and mix well.
2. In medium bowl combine flour, baking powder, and baking soda. Add to banana mixture alternating with sour cream. Pour half the batter into a greased 9 x 13 dish.
3. Combine cinnamon and brown sugar. Sprinkle half the cinnamon mixture over the batter in the dish. Top with half of the chocolate chips. Add remaining batter and rest of cinnamon mixture and chocolate chips on top. Bake for 45-50 minutes.
