Chocolate Cookie Dough Cupcakes

I don’t know about you but I am exhausted! Stagette’s can really take it out of a girl…. and this girl is ready for pajama’s at 4 in the afternoon. I had such a great weekend though so the lack of sleep is just a reminder of the fun I had while I was awake. The stagette started yesterday morning with an amazing homemade brunch of cinnamon baked french toast, cheesy Quiche, veggies and fresh fruit, followed by bridal shower games and gift opening. After lounging around and chatting til late afternoon we all headed up to Big White ski hill for the second phase of fun. We enjoyed more food and appies before heading off to dinner at the steakhouse. The food was phenomenal and with our entire stagette party wearing plaid shirts we were well-recognized as a stagette (either that or a redneck lumberjack dance team)
. The theme of the stagette was Pretty in Plaid so I felt it was a good match. After dinner we headed off to the pub and then finished the evening at the condo with a hot tub, cupcakes and more food. I don’t know what tired me out the most…. the lack of sleep or my body having to digest the obscene amounts of food we ate. Ooohhh stretchy pants here I come.

   As a dessert, I decided to make chocolate cookie dough cupcakes! I made a simple chocolate cake, filled the liners 1/3 full, added a scoop of cookie dough then topped with the remaining batter. After they cooled off I frosted them with a light cocoa icing topped with chewy cookie pieces. What girl doesn’t love chocolate and cookie dough!?!  Mmmmm…. my dinner may consist of the last cupcake and some popcorn. How I love Sundays. I hope you all had a great weekend!
