Reese Peanut Butter Cup*cakes*



Dark chocolate cupcakes with Reese peanut butter cup center topped with peanut butter frosting and chopped peanut butter cups. My ears gain weight just listening to the description again. I had my work staff Christmas party last weekend and we had a really good time. I always think it’s good to connect with colleagues outside of work to really be able to get to know them on a more personal level. We played games, enjoyed a variety of differents foods and played a few pool games. Little known secret. I never lose a game against my husband. That might have to do with the fact that if I accidentally sink the black ball it doesn’t count or if a ball doesn’t go in that totally should have, then somehow my hand accidentally bumps it in while I walk by. Either that or I’m just a pool shark. I’m going to go with the later.

Anyways we had a great night and as a potluck I was signed up for cupcake duty. This seems to be a regular occurrence when I’m asked what to bring. There are many chocolate lovers at my work and since I can never bring peanut treats to work with all the peanut allergies I knew this was the perfect treat for staff. I can’t say they were healthy by ANY means. I think I gained five pounds licking the beaters clean after making the icing. I have to keep my chocolate cake recipe a secret BUT the rest you must know. Just pick your favourite chocolate cake recipe, scoop two tablespoons of batter into the bottom of cupcakes liners, place a Reese Peanut Butter cup atop the batter and add remaining batter to fill the liner 3/4 full. Bake then let cool completely. Here’s where it gets good…

I could eat this frosting ON frosting….


Peanut Butter Frosting

  • 1 cup smooth peanut butter
  • 1/2 cup butter, room temperature
  • 2 cups icing sugar
  • 1 tsp vanilla extract
  • 3-5 tbsp milk (depending on desired thickness)


1. Cream together peanut butter and butter until light and fluffy. Stop mixer before adding icing sugar. (hahaha can you guess what I did?!)

2. Add 3 tbsp milk and vanilla. Slowly start mixer, gradually increasing speed. Mix until smooth and creamy. Add more milk if desired.

3.  Scoop frosting in a piping bag. Don’t have one? Scoop frosting into a large ziplock bag and snip a small a small hole in one corner.  Top with chopped peanut butter cups or any chocolate topping! Ta-da.
