Slow Cooker Pumpkin Soup

 Spooky to soupy. Decor to dinner. Festive to feast. Porch to pot. Hahaha all puns intended because the pumpkin is such a versatile vegetable, not to mention extremely inexpensive when in season. I just love the comfort of a warm bowl of soup on a chilly night. Why have I never assassinated my jack-o lantern before?! All these years I have been throwing my jack-o-lantern away post Halloween! Tisk tisk Chelsey. I was literally throwing food in the garbage, when all I had to do was take it inside and roast it. The hardest part is scooping out the seeds… so that’s already been done if you carved your pumpkin.
 As for roasting the pumpkin, it’s super easy from a pre-carved jack-o-lantern. Just cut it into smaller chunks, place it in a baking dish with an inch of water and toss it in the oven at 350 for 45 minutes!

Ingredients:

  • 6 cups cooked pumpkin (I used 1 medium to large pumpkin)
  • 1 tbsp butter
  • 1 small onion chopped
  • 3 cloves garlic
  • 1 litre reduced sodium chicken broth
  • 1/4 cup maple syrup
  • 1/2 tsp thyme
  • 1/8 to 1/4 tsp crushed red pepper
  • 2 tsp curry powder (optional)
  • 1/2 tsp ground coriander
  • 2 tsp cumin
  • salt and pepper to taste

Directions:

1. Roast pumpkin (see above). Let it cool completely and then scoop out the pulp into a slow cooker.

2. In a saucepan over medium heat add butter and saute onions and garlic. Add chicken broth and remaining ingredients and cook for 5 minutes to thoroughly combine.

3. Add chicken broth mixture to slow cooker and cook on low for 6-8 hours. Once cooled, puree in blender. Garnish with sour cream.

Probably didn’t think it was that easy hey? This recipe is perfect for after Halloween because half the work of making this soup is already done for you. I also thought this was a great time to post this recipe with the United States Thanksgiving just around the corner. For all my American readers, I have several recipes for Thanksgiving coming soon like apple crisp and sweet potato casserole. Maybe I will just have to celebrate both Thanksgivings. I’ll take any excuse to eat more pumpkin pie. And I gotta say that I had a lot of fun carving jack-o-lanterns  with my hubby as well.
