Easy Triffle Cake

Have you ever wondered what to do with leftover cake?! Or leftover un-frosted cupcakes?! I know what you’re thinking. How is leftover cake possible?! But after baking a cake the other day and levelling everything off, I was left with odds and ends. Aside from stuffing my face with it, I needed another option for the abandoned scraps. Throwing away cake is practically offensive to me, so I had to think of something. Then I remembered my grandma always making the best triffles. They looked so impressive and decadant that I figured it was out of my expertise. Then after looking at several pictures, I realized it was just chunks of cake, fruit layers, pudding and a healthy layer of whip cream! So the creating began. It was soooo quick to throw together and is a great last minute dessert when on the go. Hope you enjoy it.

Ingredients:

  • approx 3-4 cups of cubed cake
  • 6 snack sized pudding cups
  • strawberries
  • blueberries
  • 1 container Cool Whip

Directions:

Cut cake into 1 inch cubes and start layering! I layered cake, pudding, strawberries, and blueberries and then repeated. Top with whip cream. Enjoy!

My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished 2 bags of M&M’s and a chocolate cake. I feel better already -Author Unknown
