Healthy Granola

I had a family BBQ the other night and it was such a treat to have my dad offer to bring the food. My only job was to supply the dessert! I have been eating pretty healthy over the summer, so I wanted a healthy dessert option that would still satisfy everyone’s infamous sweet tooth. I investigated the contents of my fridge and came across some greek yogurt and fresh strawberries….hmmm yogurt parfaits! All I needed was some granola. But here’s something you should know about me first: sometimes my creativity comes from inspiration and sometimes it somes from sheer laziness. I HATE grocery shopping and I DID NOT want to go to the grocery store just for granola so I decided i’d have to make my own. And i’m glad I did because I loved how it turned out! It is such a great topping to yogurt, ice cream, oatmeal or fresh berries. It’s also a quick snack or an easy trail mix to pack on a hike. For the 2 cups of nuts you can simply use 1 cup cashews and 1 cup sliced or chopped almonds; but in my opinion the more the merrier. So I used a 2 cup mixture of sunflower seeds, pumpkin seeds, cashews and almonds! Hope you like it!


  • 3 cups rolled oats
  • 2 cups nuts
  • 3/4 cup shredded sweet coconut
  • 1/4 cup brown sugar
  • 1/4 cup sugar-free maple syrup
  • 1/4 cup coconut oil
  • 3/4 teaspoon salt
  • 1/2 cup raisins
  • 1/2 cup craisins


Preheat oven to 250 degrees F.

1. In a large bowl, combine the oats, nuts, coconut, and brown sugar.

2. In a separate bowl, mix maple syrup, oil, and salt. Combine both mixtures and pour onto 2 cookie sheet pans (covered in parchment for easy cleanup). Cook for 1 hour, stirring every 15 minutes for an even color.

3. Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

So for the dinner my dad bbq’d heavenly chicken shish kabobs with fresh onions, peppers and mushrooms marinated overnight. We served it over a bed of rice alongside greek roasted zucchini. My dad cooks like I do….. a little bit of this and a little bit of that until it tastes right. So sadly, neither him nor I have any idea what went into the marinade for the chicken or the zucchini. It was fantastic though!

Then to end an evening of good laughs, we snacked on parfaits served in wine glasses. The only thing better than wine in a wine glass is dessert in a wine glass.
