Pina Colada Cupcakes

Last weekend was my soon to be sister-in-laws bridal shower. The theme for the party was  “pink and hawaiian” and I got designated to cupcakes. I had no idea how I would decorate them, but I was excited to create a new cupcake recipe. The cupcakes would also need to be gluten-free for the bride-to-be. (I’m so lyrical in the morning…haha) Along with my basic gluten-free recipe, I substituted pineapple juice for most of the liquids and added fresh coconut as well.  So the end result was a pina colada cupcake with a coconut cream icing, topped with brown sugar ‘sand’ mmmmm…. They didn’t last long on the dessert table!

The search for the striped licorice candy was quite tedious, I swear I was in every candy store aisle in town one day. But none the less I found it and I knew it would make the perfect beach blanket (I used my crafting scissors for the jagged edge)

I am definitely keeping this idea in my jar of thoughts because it would be such a cute idea for a pool party, kids birthday, backyard summer BBQ or a beach inspired wedding. Enjoy!
